For the avocado salsa
  1. Blend all ingredients until smooth. Add salt and/or lime juice to taste.
For the tacos
  1. Trim excess fat from the pork and cut into 3-4 smaller pieces. Season liberally with salt and pepper. Let sit at room temperature for 15 minutes, then season with taco seasoning.
  2. Heat a large pot or dutch oven over high heat, Add a drizzle of oil in the bottom of the pan and add pork. Sear for 3 minutes on each side, making sure to sear the sides of the meat as well. Remove the pork pieces from the pot and set aside.
  3. Add onion to the pot, and cook for 2 minutes or until starting to soften. Add garlic and jalapeno, and cook 1 additional minute.
  4. Place the pork back in the pot on top of the onions and garlic. Add the tomato paste, lime juice, and beer. Bring the mixture to a boil, then reduce heat to low and cover. Cook for approximately 2 hours or until the meat is pull-apart tender.
  5. Remove the pork to a cutting board and let sit until cool enough to handle. Shred the pork into small pieces using 2 forks (or shredding claws if you have them).
  6. Portion pork into warm tortillas and top with avocado salsa, cilantro, cotija cheese, chopped onions, and a squeeze of lime.
