Ingredients
- 4 c carrots shredded or cut into matchsticks
- 4 tbsp fresh dill finely chopped
- 1 c golden raisins
- 4 tbsp olive oil
- 4 tbsp red wine vinegar
- 1 lemon juice of
- 2 tsp sugar
- 1 tbsp dijon mustard
- 1.5 tbsp cumin
- 2/3 tsp kosher salt
- 1/3 tsp freshly ground black pepper

Instructions
- Toss carrots and golden raisins to combine.
- Whisk together olive oil, red wine vinegar, lemon juice, sugar, salt, pepper, mustard, and cumin until very well combined. Add to carrot mixture and toss to combine.
- Add fresh dill and mix until well distributed.
- Refrigerate for at least 1 hour and stir well before serving.
