  1. Combine the flour and baking powder in a small bowl and set aside. In a separate dish, combine the cinnamon and sugar.
  2. In a large sauce pot, combine water, butter, oil, brown sugar, and salt. Bring to a boil and reduce heat to medium.
  3. Add the flour mixture and stir constantly with a wooden spoon until the mixture forms a ball, pulling away from the sides of the pot.
  4. Continue stirring and cook the dough ball for 1 minute. Remove from heat.
  5. Continuing to stir, add the vanilla and beaten eggs one at a time, fully incorporating each into the dough before adding the next.
  6. Move the dough into a piping bag fit with a star-shaped tip and remove any excess air.
  7. Carefully squeeze 4-6 inch pieces of dough into a pot of oil heated to 350 degrees, using a knife or kitchen scissors to cut each piece. Fry until golden brown, 1-2 minutes.
  8. Remove to a cooling rack or paper towels, and when cool enough to handle, roll in the cinnamon sugar mixture. Serve warm.
